It is getting cold here at night after halloween. My asian stomach is calling for a hearty clear broth Oxtail soup. Beef noodle soup is a staple dish in my family, and oxtail soup is just slight twist of it.
I love a bowl of soup, and I can eat soups every single day no matter the weather is hot or cold. I am sharing this clear broth oxtail soup that can be made in one soup pot and can be paired with rice or noodles. The meat is tender and soft after 3 hours of boiling.
What you need to make oxtail soup (serving 4 people)
- 1.5 pound of oxtail
- 1/2 Korean Radish
- 1.5 liters water
- 1/4 onion
- 2 pieces of ginger
- 5 cloves of garlic
- 1 bunch of green onions (cut to small piece for garnish on top)

It is really easy to make with few simple ingredients, and it will work with beef rib soup as well. When it is top with green onions at the end, it brings out the fragrance of the beef and you get the aroma of green onions. It is really tasty when you eat it with rice, kimchi, and a little bit of salt, pepper or soy sauce.
