I recently purchased a beautiful Japanese Donabe rice cooker online, to fulfill my quarantine cooking goal at home. I first saw it at Toiro Kitchen & Supply , but the size I needed already sold out. So I bought it from Jinen Store . It is handcrafted in Japan and as beautiful as the photos online. I can’t stop staring at it on my kitchen shelf. I have made some soups, porridge and the oil sardine rice that Toiro Kitchen & Supply provided.

Equipment
- Japanese Donabe Pot (1-2 Cup Rice Capacity)
Ingredients
- 1 Cup Short Grain Rice Wash and rinse well
- 1 Oz Ginger Julienned
- 1 Cup Dashi Stock Any choice of your favorite soup stock
- 1 Tbsp Soy Sauce
- 1 Tbsp Sake
- 1 Oz Shimeji Mushroom This is optional
- 2 Stalks Green Onion / Chives
- 1 Tin Tiny Tots Sardin in oil
Instructions
- Combine rice, soy sauce, stock, sake in the Donabe pot and soak for 20 minutes
- Spread the ginger and half of the green onion over the rice, and place the sardin nicely with the oil in the tin
- Cover both lids of donabe, cook over medium high heat for 15 minutes
- Turn off the heat and keep the lids on for 20 minutes
- Open the lids, sprinkle the rest of the green onions, and fluff the cooked rice
