Korean BBQ Short Ribs Galbi: The nicely seared short ribs are tender, juicy and flavored with sweet and savory marinade sauce. It goes perfectly with a bowl of steamed rice and some side dishes, like kimchi, chilli pepper, lettuce salad.
It is easy to make at home with or without a grill. I’m sharing a recipe with the boil and braise method, that will eliminate over burn the beef but still keeping the caramelized surface.
The flavor : It’s all about the marination
The key of making this delicious short rib dish is the marinade sauce and the time of miranation. The sauce contains fresh vegetables and simple spices. It is better to marinade the ribs for at least 3 hours, the longer the better.
The boil and braise method to keep it tender
To make the ribs tastes like cooked from the griller and still maintains juicy and tender. The boil and braise method allows the ribs to be tender and even more with the flavor. Once the ribs absorb the broth and sauce, the surface will get slightly burn like the grilling affect.
Korean BBQ Short Ribs Galbi
Equipment
- Blender or Food processor
- Large Mixing Bowl
- Non stick pan or a BBQ grill
Ingredients
- 1.5 Lbs Beef Short ribs (galbi cut)
Marinade Sauce
- 1/2 Onion
- 1 Apple or Asian PEar
- 1 Kiwi (optional)
- 4 cloves garlic
- 2 oz ginger root
- 2 Tbsp Soy Sauce
- 2 Tbsp Sake
- 1 Tbsp Brown Sugar
- 1/2 Cup Water
Instructions
Prepare Ribs
- Soak ribs in clean water for at least 30 minutes to remove excessive blood
Marinade Sauce
- Blend all the ingredients in the blender or food processor
- Marinade all ribs in the Sauce for at least 3 hours
Cooking process
- Add about 1 tbsp cooking oil in a non stick pan, turn on medium heat
- Place the ribs in the pan, cook about 3-5 minutes on each side
- Add about 1 cup of water, turn low to medium heat start the boil and braise
- Once all the water is been absorbed by the ribs
- Cook another 3 minutes to give the burning grilled effect, the ribs are done
- Serve with a little bit of sesame seeds or green onions on top
