The Autumn is here, when you see different of squashes, pumpkins display in the supermarkets. It is that time of the year, everyone is starting to decorate the house with sorts of pumpkins or halloween theme. For me, I like to cook with the fresh ingredients in the season.
Savory Zucchini Pancakes is a simple dish to make. Zucchini is always available in the supermarket here in southern California. You can see variety of zucchinis at the end of summer toward the fall. I found this post from Home Stratosphere informative talking about 14 types of zucchinis.
This post totally initiated my hunting mode for all zucchinis that are available in my area.
Sometimes I just want a small portion for lunch or dinner, I make Korean Style savory pancake. There are varieties of pancakes in Korean Cuisine. Kimchi pancake, Seafood Pancake, Vegetable pancake, Potato pancake… etc. I have couple zucchinis in the refrigerator today, so I thought I would share the Zucchini pancake recipe. The Ingredients are simple as 1 zucchini, 1 Cup flour and 1/2 cup water.(eggs are optional)
Let’s start with cutting the Zucchini in slices, and add a tsp of salt and mix well. Set aside for about 10 minutes. The zucchini will be wilted with excessive water. Remember to drain the zucchini water and use it for mixing the flour. (this way allows us not to add extra salt to the pancake mix because we will make a delicious dipping sauce)
Mix the zucchini water with 1 cup of Korean pancake flour mix well. Add the drained zucchini to the batter and mix well. The consistency should be like the photo below.
Adding an egg is optional, it doesn’t really change the flavor or texture too much. Just keep in mind to reduce the water amount, if you add an egg to the batter. Heat the non-stick pan in medium heat with a tablespoon of any cooking oil. Scoop the batter with a ladle to make a small circle shape pancake. One zucchini batter can make up to 5 small pancakes. Cook both sides are golden brown and ready to serve.
For the dipping sauce : 1 stalk of chopped green onion, mince 2 cloves of garlic, 2 Tbsp Soy Sauce, 1 Tbsp Rice Vinegar, 1tsp sugar mix well. It’s slightly sweet, sour and savory. You can add some chili paste for a little kick.
