I think almost every household has bananas in their kitchen counter, and the banana are often overly ripe easily. I like to use ripe banana for smoothies and making banana nut bread. It is tasty, moist, airy, bouncy and nutritious.
Here is the simple recipe for Tasty, Airy and Bouncy Banana Nut Bread. I love the more chewy and bouncy Banana Nut Bread so I’m sharing this recipe with bread flour. If you don’t have bread flour in hand, all purpose flour can be used , but it won’t be as bouncy as the bread flour can reach.

Tasty, airy and Bouncy Banana Nut Bread
Simple, tasty bouncy Banana Nut bread that you will love
Servings 4
Equipment
- Mixer
- 2 mixing bowls
- 8 x 4 Loaf pan
Ingredients
- 1 3/4 Cups Bread flour all-purpose flour is ok
- 2 Tsp Baking Powder
- 1/2 Tsp Baking Soda
- 1/2 Tsp Salt
- 1 Cup Mashed ripe bananas 2-3 bananas
- 2/3 Cup Sugar
- 1/3 Cup Butter Room temp.
- 2 Tbsp Milk Nut milk is okay
- 2 Large Eggs Room temp
- 1 Cup Chopped Walnuts or any nuts you like
Instructions
- Preheat the oven to 350 F degrees
- In a mixing bowl, combine all dry ingredients : flour, baking soda, baking powder, salt. Mix well
- In another mixing bowl, mix the butter and sugar with stand mixer or hand held mixer. until the texture is light and fluffy.
- Add banana, eggs, 1/2 of the dry mixture and 1/2 of the nuts. mix well
- Pour the rest of the flour and mix together. Do not over mix it.
- Grease the loaf pan, pour the batter mixture , and sprinkle the rest of nuts on top
- Bake for 55 Minutes at 350 f degree oven, until it turns slightly brown on the edge. (or until a toothpick inserted near the center comes out clean.
- Let it cool for 10 – 30 minutes, and slice it into your desired size.
